You can only obtain saddles through other means:

• Loot Chests: Saddles can be found in chests in various structures, such as:
  • Dungeons
  • Mineshafts
  • Desert Temples
  • Jungle Temples
  • Strongholds
  • Nether Fortresses
  • Ruined Portals
• Fishing: You have a small chance to obtain a saddle while fishing.

Once you have a saddle, you can use it to ride:
